The West Indian cuisine constitutes the culinary delights from the different states located in the western part of India. The West Indian food comes with a great range of variation in taste, flavor, color, and essence and these make them the most desired delectable from the western boundaries of India.

The taste of Western India can be enjoyed in the culinary activities of the Konkan, Goan, Maharashtrian, and the Parsi cuisine.

West Indian food from Maharashtra: Grated coconut, fishes, peanuts, and cashew nuts happen to be the principal ingredients of Maharastrian or Marathi food. They even use the peanut oil as the main medium of cooking. The Malvani and the Goan cuisine forms an important part of the Marathi culinary delights. The Malvani food mainly constitutes the coastal foods based on the dishes made of coconut and the various forms of seafoods. The Goan foods include lobsters, prawns, crabs cooked in hot garlic sauce, dry coconut, and an assortment of spices. The Goan food has an excessive influence of the cooking style of the Portuguese cuisine, as they had been the inhabitants of the place for a long time. West Indian food from Gujrat: The Gujrati food is mainly served as a ‘Thali’ comprising the staple diet of the state. The Thali includes, Roti or Chapati, daal or kadhi, rice with subji or shaak and sweets.Some of the well known dishes from Gujrat happens to be, snacks like, ‘chevdas’ and ‘ghatias’ and ‘dhoklas. ‘Undhiu’, a vegetable dish, ‘kadhi, a delicacy made of yogurt are the essentials of a Gujrati meal. The special sweets from Gujrat are, ‘Doodhpak’, a sweet made by thickening milk and ‘shrikhand’, an excellent dessert made of yogurt with a tint of cardamom and saffron.

West Indian food from Konkan: The Konkani food is also an exquisite form of food of Western India. It is also a combination of the various delicious dishes made by mixing spices like green chilli, sesame seeds, peanuts and freshly flaked coconut and many other elements.

The different Persi dishes also make a great part of the West Indian food. Dhanshak, a preparation of lentil, mutton and vegetables cooked in a pot consumed with specially made brown rice is one of the true Persi delights. A prawn curry called, ‘Kolmino patio’, having a special sweet and sour taste is also a marked item from the Persi cuisine. A fish curry served with rice and lentil, called ‘Dhandal patio’, is also one of the specialized Persi dishes.
