Karanji
Ingredients:
Filling:
- 1 pinch dry Ginger Powder
- 1 cup Powdered Sugar
- 1 pinch Nutmeg Powder
- 2 tbsp Mixed Dry fruit pieces
- 1 cup grated Dry Coconut
- 2 tsp Poppy Seeds
- 2 tsp Maida
- 4 Elaichi
Dough:
- Warm milk
- 1 cup maida
- 1 tsp Ghee
- Salt to taste
Preparation:
Take the dry coconut and roast it. Roast the maida in the ghee, also roast poppy seeds and then take all of them together asnd grind them. The filling is prepared. Then make the dough mixing all the ingredients mentioned in the dough. Make it bit stiff. Shape the dough into small oval shaped puris. Stuff the puris with the filling. Use little milk or water to seal the puris. Fry them till they turn deep brown. Karanjis can be served both hot and cold and can be stored for several weeks.
Moti Chur Laddu
Ingredients:
- 1/2 cup raisins
- 2 cups besan
- 1 & 1/2 cup sugar
- 10 cardamom sticks
- Ghee or oil
Preparation:
Make a batter without any lumps by mixing 1 and ½ cup water with besan. Grind the cardamom sticks into powder and keep apart. Fry the raisins in little ghee. Mix sugar and 1 cup of water and heat it to make sugar syrup. Hold a ladle with perforations on the oil and pour the batter through it so that it falls drop by drop on the oil. Set the flame to low and cook it till it is well prepared. Blend it with sugar syrup, raisins and cardamom powder by stirring well and leave it to cool down. On getting cool, shape them as round laddus.
Chick peas and potato curry
Ingredients:
- Chick peas
- 1large onion
- 3 cloves of garlic
- 3 lbs potatoes
- 1 chilly pepper
- 3 tsp curry powder
- 1/2 tsp cumin powder
- 2 tsp vegetable oil
- 1 cup of water
Preparation:
Peel off the potatoes and cut into pieces. Peel the onions and chop them. Put oil in a pan and heat well. Put the onions and the chilly pepper. Cook for 2 minutes. Add a cupo of water and continue to stir, put the garlic and keep on stirring until everything becomes a paste. Cook approximately for 5 minutes. Put the potato and the chick peas and cook till it becomes soft. Add the rest of the water and cook. When consistent gravy is prepared and seems to be favorably thick, put cumin powder and remove from flame. This can be had well with, puri, roti or rice.
