The sauce is an essential attribute to a wide range of delicacies. Various forms of sauce recipes can be assorted from the cuisines worldwide. They are known by various names in different countries. The sauces are most commonly referred as salsa, chutney and in umpteen other forms. Sauce generally comes in a semi liquid form resembling thick gravy. There are scores of sauce recipes which are specially prepared to add up a special flavor to certain delights.

Most of the sauce recipes bear a traditional method of preparation and are based on certain ingredients like, tomato, milk, stock, egg yolk and several other essentials. The taste of the sauces can be sweet or sour and they are served in both hot and cold forms. There are also some particular kinds of sauce that are exclusively used as salad dressings. Mayonnaise is one of the chief types among them. On the other hand, the tomato sauce is the basic sauce that is used in various forms. There is another sauce called white sauce, which is applied in different ways in preparing numerous dishes and can be easily made at home.

Here are the few sauce recipes which will surely help in providing a special flavor to all your cooking experiments.

Tomato Sauce

Ingredient:

  • 4 large tomatoes
  • 2 tablespoons tomato puree (optional)
  • 2 bay leaves
  • 4 to 6 peppercorns
  • 1 teaspoon chopped garlic
  • 1 teaspoon dried oregano
  • 2 tablespoons olive oil
  • 1 small onion
  • 1/4 cup tomato ketchup
  • 1 teaspoon sugar
  • 1/2 capsicum
  • Salt to taste
Preparation:

Peel the tomatoes and cut them into quarters, take out the seeds. Keep the tomato pulp inside. The Olive oil should be heated and put the peppercorns and bay leaves in it and sauté it for few moments. Then add the capsicum, onion and the garlic and sauté for a while. Put the flame to simmer and add the tomato pulp giving it about 10-15 minutes to reduce and become thick. Then add the tomato puree, sugar, salt, and tomato ketch up and leave them at simmer for some more time. Lastly add the oregano and mix all the ingredients well. Remove the bay leaves, peppercorns and capsicum and let it cool down and then put it in an airtight container and refrigerate.

White Sauce

Ingredient:
  • 1 tbsp. butter
  • 1 tbsp. flour
  • 1/4 tsp. salt
  • 1 c. milk
  • Oregano
  • cheese
  • Sour cream
  • pepper
  • Garlic salt or powder
Preparation:

Melt the butter in a pan, put the flour and continue stirring, put salt and pepper. Keep on stirring. Put milk in it . Cook it in medium heat and continue stirring till the mixture becomes thick and full of bubbles. Cook it for 2 minutes more and remove from the flame. White sauce is a great attribute to pasta and various sea food dishes.

Mayonnaise Sauce

Ingredients
  • 1 pc egg yolk
  • 15 ml vinegar
  • 1 tsp mustard
  • 200 ml of soya oil Preparation:

    Put egg yolk, mustard and vinegar into a bowl and mix well with a whisk. Slowly keep on adding oil in the mixture. Continue whisking until a thick emulsion has formed. If the mix gets very thick then you can add up a little warm water. The Mayonnaise is ready but makes it in correct proportion as it is better to have it fresh.
