A raita is a simple yet very tasty preparation to be attributed well to scores of dishes. It is mainly made by mixing different vegetables and fruits with the beaten curd. The raita provides a cool and spicy flavor to one’s lunch and dinner menus. Here are various forms of raita recipes that will surely offer an extra charm to your dining itinerary.

The raita recipes are easy to prepare and make delicious treats. Here are some of the preparations.

Boondi Raita

Ingredients:
  • 2 Cups Curd (Yogurt)
  • 100 gms Gram flour
  • Finely Chopped coriander leaves
  • Red chili powder to tast
  • 1/2tsp Roasted Cuminpowder
  • Salt to taste
  • garam masala
  • Oil to fry
Preparation:

Make a consistent mixture of gram flour and water. Add salt and beat it. Heat the oil and pass the mixture through it with a spoon. Fry till it becomes golden and crispy. Stir the mixture with a hand blender, sprinkle garam masala over it and garnish with chopped coriander. Refrigerate for an hour and serve cool.

Onion Raita

Ingredients:
  • 1/2 kg curd
  • 2 onion
  • 1 ginger
  • coriander leaves
  • 1 tsp salt
  • 1 tsp oil
  • 1/4 mustard seeds
  • 1 green chilly
Preparation:

Beat the curd well and then add salt, green chilly and coriander leaves. Heat the oil and add mustard seeds. Add it to the curd and mix well to make the raita. Refrigerate it and serve.

Fruit Raita

Ingredients:
  • 2 cups Curd (yogurt)
  • 3 Bananas
  • 1 Ripe Mango
  • 1 cup Pomegranate seeds
  • 1 small Pineapple
  • 2 Apples
  • Black pepper powder to taste
  • Sugar to taste
  • Salt to taste
  • Chopped coriander leaves
Preparation:

Blend and beat the curd with a hand mixture. Add salt, sugar. You can also add little milk or water if the curd seems thick. Cut the fruits in cubes and add it to the curd. The raita is ready. Refrigerate it and serve. Garnish with coriander leaves.
