Navratri is an Indian festival, that takes place at the beginning of the Autumn season and is celebrated in various ways throughout India in numerous forms. The festival of Navratri continues for nine nights and hence the name. The festival starts on the first day of Ashwin Shukla Paksha of the Hindu calendar and continues till the ninth day. The festival is celebrated through worship, dance and musical Ramlilas and other cultural events. People deck themselves in their best attires during the festival and the various festive meals happen to form a great part of the festivities. The principal Navratri recipes include various forms of swts, such as, laddoos, payesh, bundis and many more. Vrat ka Chawal
Ingredients: 125 gms samwat ke chaawal, 1 diced big size potato, 2 cloves, 3 cup water, 2 cardamoms, 30 gm ghee, 2 tsp kala namak , 1 tsp cumin seeds ,1/2 tsp chilli powder, cinnamon sticks and coriander leaves for garnishing.
Preparation: Heat the ghee and add the cumin, cardamom, cinnamon and cloves in iut and fry for a moment. When they get bit colored then add the potato and the rice. Fry them well. Put water, chilli powder and salt and boil. Put the flasme to simmer and cook it for 15 minutess until the water gets asbsorbed. Remove from flame, garnish with coriander leaves, and serve hot.
Aloo Mewawala
Ingredients: Oil, 1 tbsp ginger garlic paste, salt, 12 peeled of potatoes of medium size, 1 tsp cumin seed, ½ cup coriander, 4 tbsp crème, 1 tbsp chilli powder, 1 tbsp sugar, I tsp garam masala, ½ cup of fround pistachio, pureed tomato, 4 chopped onions and 1 tsp turmeric powder.
Preparation: Make a hole in each potato,stuff them with nuts and coriander leaves.close with other potato piece. Heat the oil and fry 2 to 3 potatoes at a time anf keep aside. Put cumin seeds, and let it pop up and then mix onion and fry till light brown. Add up the powdered spices, the ginger garlic paste and the tomato puree. Cook till the oil gets seperated and then add the potatoes and ½ cup of hot water. Put the flame to simmer and add sugar, crème and salt and cook until the gravy is prepared. Serve it hot with the chawal.
