Mango is one of the versatile fruits that have conquered the heart of millions through ages. The fruit has its origin in South East Asia and grows the best in the tropical and sub tropical climate. It is one of the fruits that have gained immense popularity across the world for its unique taste. The fruit is available in numerous varieties and each of them is denoted by a name based on the type. Mango is a fruit, which can be used both in ripened and unripened condition. The unripe mango or the green mango happens to be the ingredient for various delicacies. Mango is also a fruit very much rich in nutritional contents and is a good source of Vitamin A and C, Potassium and high in various anti-oxidants and fiber. The food is deliciously palatable, if eaten raw and tantalizes your taste buds when induced in various recipes. There are innumerable mango recipes and it is not possible to include all of them within this limited scope. Mango can be well transformed into umpteen forms such as, jam, jelly, salsa, pie, ice cream, juice, mousse, shake and many more. Here are few of the chosen mango recipes from the countless range and they are simple enough to be tried out at home and savored at their best.
Mango Lassi
Ingredient: 3 cups of plain yogurt, 1 cup milk, ½ cup sugar, 1 cup water, 1 cup fresh mango pulp, ground pistachios.
Preparation: Take a pitcher, mix all the ingredients together and whisk it actively and then chill it and serve it cool with a whip of crème on it. You can also put the ingredients in a blender to mix them well and prepare the Lassi. A pitcher is used to give a traditional touch to the tasty treat.
Mango Jam
Ingredient: 1 bottle liquid pectin, 4 cups of Mango puree, 7 and ½ cup sugar, 2 tbsp of lemon juice
Preparation: Chop the mango, make the puree out of it, and then put it in a saucepan. Sugar and lemobn juice should be added to it and everything needs to be mixed well. Put the mixture at a full flame and boil it for 1 minute with a continuous stirring. As soon as the mixture wikll be removed from the flame, the pectin must be put at once in it. If there will be any foam, skim it off with a spoon and the jam is ready. Put it in a sterilized, airtight container.
Mango Chutney
Ingredient: 1 cup minced onion, 1 clove minced garlic, dried cinnamon, dried mustard, minced ginger, thinly sliced green mangoes, crushed chilli pepper, minced red pepper, raisins,currants, 2 cup sugar, 1 cup white vinegar, salt
Preparation: Mix sugar and vinegar and boil them until the sugar is dissolved. Keep on adding up the rest of the ingredients by putting down the flame at a simmer and stirr constantly till the mixture turns syrupy and thick. Store it in a sterilized, airtight can.
Pickled Mango
Ingredient: 600 grams green mango, 500 grams of sugar, 2 tsp of salt, 1 tbsp cumin seed, 2 tsp cardamom seed, 1 tsp poppy seed, 1tsp red chilli powder.
Preparation: Wash, peel off and grate the mangoes. Mix it well by putting sugar and salt. The dardamom, poppy and cumin seeds should be roasted, ground and mixed with the mango mix and the chilli powder. The pickle is ready but should be kept in a sterilised jar, cover it with a cotton cloth and putr under sun for atleast 1 week. The jar should be shaked once a day for a nice blend of all the ingredients.
Mango Dal
Ingredient: 1 cup Toor dal, 1 unripe mango cut in slices, ½ tsp red chilli powder, ¼ tsp turmeric powder, 2 green chilli and salt, 1 tsp of mustard seeds, 1/2 tsp cumin, a pinch curry leaves, ghee.
Preparation: Put dal, mango pieces, green chilli, red chilli, turmeric powder in the pressure cooker, add three cups of water and cook till 3 to 5 whistles. Remove it from flame and open the lid of the cooker as the pressure is released. Add salt and atir well.
Put the ghee in a pan and add the seasonings, that is, cumin, red chilli, curry leaves, hing, mustard and garlic. Put the flasme to simmer and fry for few minutes. Once it is fried, put the cooked dal, mix it well, cook for a moment in simmer and then remiove from the flame, and serve hot.
