Ingredients:
- 500 gms of diced or stripped boneless chicken
- 1 cup Arhar or Toor Daal
- 2 cups of vegetables, like, carrots, beans peas
- 1 tsp cumin seeds
- 1/2 tsp turmeric powder
- 1 tsp freshly ground pepper
- 1 bay leaf
- 1 tsp garam masala
- 1 tbsp coriander powder
- 8 cloves garlic minced very fine
- 2 large onions chopped very fine
- 3 tbsps of sunflower or any other vegetable cooking oil
- 1 cup canned coconut milk
- 2 liters chicken stock
- Lemon Juice (2 lemons)
- Chopped coriander leaves
Preparation:
Put oil in a pan and set it on a medium flame. Put the bay leaves and fry for few moments and then add onionsand fry them till they become transparent. Then put the garlic and cook for a minute or so and add all the spices and continue stirring it and cook for 2-3 minutes. Then it is time to put the chicken and fry it till it bears a light brownish tinge. After the chicken being fried well the Toor or the Arhar Dal need to be added and cooked for a minute. Then all the vegetables need to be put in and the everything should be cooked at a simmer flame until the dal becomes soft.When the dall seems to be well cooked , the coconut milk should be added and mixed well. Then take it of the flame and put lemon juice in it and make it sure that it must get mixed up thoroughly. Garnish it with freshly chopped coriander leaves and serve it hot along with Basmati rice or crispy bread toasts.
