Upma

Ingredients:
  • 1 inch Ginger chopped
  • 1 chopped Onion
  • 1 Carrot chopped
  • 1/4 cup Green Peas frozen or fresh
  • 1 tsp Mustard Seeds
  • 3 Green Chillies slit sideways
  • 1 Potato chopped
  • 1 cup Rava / Sooji (Semolina)
  • 25 gms fried Cashew Nuts (optional)
  • 1 Capsicum chopped
  • 1 tsp Urad Daal
  • 1 tsp Channa Daal
  • Few curry leaves
  • Finely chopped corianderleaves
  • 1 tblsp Ghee
  • Lemon juice to taste
  • Salt to taste
  • 1/2 tsp Turmeric Powder
  • Chili powder to taste (optional)
  • 2 tblsp Oil
Preparation:

Strain the suji through a cheese cloth or a sieve, heat the ghee or the b utter and fry the suji until its brown and kmeep it aside. Then put ghee again and add mustard and let kit pop up.Add the dal, chana and the curry leaves and fry them until they are red. Put the onion, ginger and green chillis and ginger and saute for 2 to 3 minutes. Add the vegetables and salt according to your taste. Then add 3 cups of water and leave it to boil at asimmer flame. Add the fried rava and stirr well till the mixture becomes thick. Keep it in the simmer flame and then add lemon juice and serve it hot by garnishing it with chopped coriander leaves and cashew nuts.

Vada Sambhar

Ingredients:
  • 1/2 cup Urad Daal
  • 1/2 cup Moong Daal
  • 1 tsp Ginger
  • 1-2 Green Chilies finely chopped
  • Salt to taste
  • 1/4 tsp Baking Soda
  • 1 finely chopped Onion
Preparation:

Soak the dals overnight, if you are lacking time then you can soak it for 3-4 hours also. Put the dal in the blender and grind it well. Add the onions, ginger, green chillis, baking powder and salt , mix them and set apart. Put oil in the pan and put the mixture and fry till it turns golden. Serve with Sambhar or Rasam.
